Monk Fish Marinade in Parchment Paper



Cooking fish in parchment paper is about the same for all types of fish. You will want to keep the thickness about an inch; however, if the fish is thicker cut the fillet into the correct thickness.


1-2 lbs. Monk Fish
Whole tomato (diced and seedless)
Onion (sliced thin)
½ cup Mushrooms (sliced)
1 Green pepper (sliced)
½ cup Celery (diced)
¼ stick butter
2 tbs. Flour

Preheat oven to 400 degrees. In a pan melt butter and sauté the vegetable until tender and add flour (to thicken). In a baking dish place Monk Fish portion in the center of parchment paper and spoon about ½ cup of mixture over the fish-fold and seal the parchment paper and put into a preheated oven and cook for 20-22 minutes. (Serves 2-4)
